Un primo piatto di mare dal carattere raffinato e avvolgente: i paccheri accolgono delicatamente un sugo cremoso realizzato con bisque di Ricciola, ottenuta dalla lenta cottura delle sue parti più saporite, che dona al piatto una profondità marina intensa e vellutata. Il filetto di Ricciola fresco, tagliato al coltello e scottato dolcemente, si fonde con la dolcezza naturale dei datterini gialli e con il gusto concentrato dei pomodorini confit, arrostiti lentamente a bassa temperatura. Un tocco aromatico è dato da basilico fresco e prezzemolo tritato, che esaltano la freschezza del piatto senza sovrastarne l’equilibrio. A completare la sinfonia di sapori, una sfumatura di rum Don Papa, pregiato distillato filippino, che aggiunge note calde e speziate, rendendo ogni boccone un’esperienza sensoriale complessa e armoniosa.
